The Uncounted tab of a stocktake only lists products that have stock in the selected warehouse or that have a default bin location assigned there. A product without stock and without a default bin location in this warehouse is therefore missing from the list, even if you find it on the shelf while counting.
This applies to each variant individually: If an item comes in six sizes and only two of them have stock, only those two appear in the list. There is no option to show all products with stock 0.
How to count a missing product anyway
The easiest way is in the WMS App. During counting, simply scan the product you found and enter the quantity. This also works if Pickware doesn't expect any stock there.
In the Shopware Admin, it only works via a workaround in the Counted tab. There, open the context menu of a counting on the bin location where you found the product and select Add product to counting process. Select the product and enter the quantity.
This requires that a counting already exists for this bin location, and the product always ends up on the bin location of the row you clicked. If you can't find the product there, count it in the WMS App. The steps are described in detail in Correcting stocktake countings and adding products afterwards.
Note: The product search is the standard Shopware search. It finds products more reliably by name than by product number.
Other reasons why a product isn't displayed
A filter is active. Filters by category, manufacturer, or tag and the Hide inactive products filter hide products.
The product has already been counted. Saved countings no longer appear in Uncounted but in the Counted tab. The Last counted filter also hides everything that was counted in an earlier stocktake within the selected time range, see Rolling stocktake.
The product is on Unknown. In the filter menu, you define whether stock on the Unknown bin location is displayed.
The product is not stock-managed. Such products are excluded from the stocktake.
You can find the entire process in Performing a stocktake: process from start to finish.
