In Pickware, under Product Details in the Stock tab, you can view the stock levels of your products. Here, your stock is broken down into physical, online not available, reserved, and available stock.
The physical stock refers to the total stock across all warehouses. This includes, for example, stock in return warehouses or retail stores.
The available stock represents the quantity of the product that is available for sale in your online shop. It therefore corresponds to the physical stock minus the stock that is not available online and the reserved stock.
If you disable stock management for a product, that product is always available. You can find more information on this topic here:
