To enable certain payment methods only for individual store locations and to run all Shopware analytics separately for each location — so that, for example, the conversion rate of your online shop isn't skewed by your brick-and-mortar store — you need to create a separate subshop for each location.
To create a new subshop, go to Settings → Basic Settings → Shop Settings → Shops in the backend, open the list of subshops, and click Add.
Select Subshop as the shop type and enter the desired name of your store location under Name. It's important that you use the same URL as for your main shop under Host and enter a very high value for the position, e.g. 100. This ensures that every customer who visits your shop URL always ends up on the main shop, while you can still access the shop without any issues from the POS system.
In the Localizations field, you can define which combination of language and country is assigned to this subshop. In the Text Snippet Management, you then have the option to design, for example, receipts in the respective language.
Important: Don't forget to mark the subshop as active, otherwise, for example, document generation in Shopware won't work correctly.
